Quick Black Beans in a Pinch

  1. Combine both cans of black beans and one can of water in a pot.

  2. Bring it up to a low rolling boil.

  3. Add everything at once: bay leaf, onion powder, complete seasoning, Cuban mojo, chopped onion, cumin, orange packet, jam packet, vinegar, sugar, salt, and the ají cachucha.

  4. Reduce to low-medium heat and let it roll for 10 to 12 minutes.

  5. Taste and adjust the seasoning. Serve over white rice.

This is the "company's coming and I have 15 minutes" move. It's not a replacement for frijoles built on fresh sofrito, but it gets you 90 percent of the way there from the pantry.
