Quick Smoked Pork Shoulder
For when you have 4 hours and a pork shoulder. Mustard-citrus binder, heavy Cuban rub, low and slow until tender.

Rub the shoulder with the binder: mustard first, then work in the orange and lime juice.
Hit it hard with the rub: generous Sazón Completo, tons of salt, plus cumin, oregano, garlic, and paprika. This is not the day to be shy.
Run the smoker low and slow.
Cook by temp, not time, until it's tender. Rest it before you slice or pull.
